Closest thing to 1869 I can think of are the anno 1503-1602-1701 series.
But none of them were running on a MAC as far as I know.
And 1602 was released in 1998, the others were after 2000.

Maybe Wally will know something more of it .......

*Edit
Could it be Uncharted waters?

Some screenshots (alas not MAC)

HotU MACgarden seems pretty buggy lately .... :/

I'm looking for a few games too.

One was a first person, and I remember it had something to do with a gold rush. You made a lot of decisions, and picked a partner. There would be random decisions of things you could buy to sell later, like eggs and kittens. I never managed to get to the end of it in class.

The other one was sort of the same, but had something to do with the Amazon river, and finding some sort of cure for this jaguar that came into your room and talked to you. You were in a river, and could stop off at some locations and identify like...birds and bugs and plants or something.

Second one is The Amazon trail.

No Mac screenshots, seems the Mac owners are pretty lazy (squints@Wally)
Luckily there are Win3 screenies:

About that first one, I know it, but I can't remember the name ........ Sad

Wow... Seems I was worse at Amazon Trail then I thought, I don't remember talking to people. I tried looking for the first one again after I posted, I think it might be Yukon Trail. (Which shows alot for the inventiveness of the namers.)

Yep, that's the one I couldn't get the name. Again no Mac screenies.

If you liked that game you will also like the others of the 'trail' series:
