I got pipemania, havent played it for years, and I tried to find some instructions, but couldnt find any, and I dont understand how you actually win the game? And also, how do you change pipe pieces quicker other than just clicking on the squares?

I really like this game, but I dont really understand it at all?!

You have to join the keep joining the original pipe section with other sections of pipes so that the water can flow through. If there is a drainage outlet, join the pipe all the way to it. Otherwise, you would have to keep joining the pipe to form a longer pipe until the time limit ends.

The objective is not to let the pipe burst and not to let the water flow out.

If you can forsee that you'll be using the pipe section for another square, you could put it there 1st. That way, you would not have to click on the same square to change the pipe section that you do not want. By the way, when the time limits ends, any extra pipe sections that had been put on the board and do not form part of the long pipe, will get your points deducted.
